Because of this, it is said that sushi restaurants are having a hard time these days.

Reporter Ahn Seo-hyeon covered the story.

I visited Noryangjin Fish Market on a weekday afternoon.

[노량진 수산시장 상인 : (광어가 얼마예요?) 1kg에 3만 원이에요. (3만 원이에요?) 2kg면 6만 원이죠.]

In March of last year, 1 kg of flatfish was less than 8,000 won.

The local price has more than doubled in recent years.

To find out why, I went to Jeju Island, where there are many flounder fish farms.

[김승호/광어 양어장 대표 : (재작년) 단가가 하락하면서 광어를 많이 (수조에) 넣을수록 적자 보는 구조였기 때문에 양식업자들이 무서웠죠.]

In short, there were many cases of giving up flatfish farming after the price of flatfish plummeted last year.

[김승호/광어 양어장 대표 : ‘아, 나 이제 (광어 양식) 못해, 만세’ 하고 ‘그럼 어떻게 하지? 다른 어종으로 전환하자’ 해서 전환한 게 도다리 쪽으로 많이 갔어요.]

There is also a shortage of manpower at the fish farm due to COVID-19.

[김승호/광어 양어장 대표 : 입국이 안 되니까, 외국인 (노동자) 수급이 안 돼요. ‘수조는 좀 비워놓자’ 사람 오면 그때 하고…그래서 전체적으로 (광어 치어) 입식량이 줄어든 효과가 나타난 거죠.]

Although the supply has decreased like this, demand has risen sharply after the COVID-19 outbreak.

[김승호/광어 양어장 대표 : 횟집 위주로 소비되던 회 시장이 배달 이런 것들을 통해 팔리다 보니까, 1인당 광어 소비량이 많아진 것도 있죠.]

Usually, flatfish need to be raised for more than a year before being exported to sushi restaurants or supermarkets, so production cannot be increased right away.

As flatfish prices skyrocketed, it was especially difficult for self-employed people who run sushi restaurants.

[전종남/횟집 운영 : 대광어랑 우럭 두 마리 들어가는 건 이제 (메뉴판을) 막아놨죠. 대광어랑 우럭 두 마리잖아요. 이게 들어가면 (이윤이) 안 남는거죠. 그래서 ‘안 팔래’ 그냥….]

Uruk, which has been considered as a national raw material along with flatfish, is also recording the highest price in the last 10 years.

However, it is not possible to raise the price easily just because the cost has soared.

[전종남/횟집 운영 : (배달 앱) 리뷰가 올라왔는데, ‘양이 적어졌다’고. 사실 양을 더 드렸거든요. 정말 원가 공개하고 싶을 정도로 마음이…]

Business restrictions have been eased, but we wait for customers with patience every day to see when the prices of flatfish and eel will go down.
